Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan by greasing it or lining it with parchment paper for easy removal.
- In a large bowl, mix the melted butter and sugar until smooth. Add in the vanilla extract, followed by the eggs one at a time, ensuring to mix well after each addition.
- In a separate bowl, sift the flour, cocoa powder, baking powder, and salt together.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Carefully fold in the crushed chocolate sandwich cookies and mini chocolate chips, if desired, taking care not to overmix.
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean, with a few crumbs clinging to it.
- Allow the brownies to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
