Instructions

  • Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking pan by lining it with parchment paper.
  • In a mixing bowl, combine the graham cracker crumbs and the ¼ cup brown sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of the prepared baking pan, creating an even layer. Bake for 10 minutes, then let the crust cool slightly.
  • While the crust is cooling, prepare the filling. In a large mixing bowl, whisk together the mashed sweet potatoes, ½ cup brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until the filling is smooth and well blended.
  • Pour the sweet potato filling mixture over the cooled crust, spreading it evenly. Bake in the oven for 35-40 minutes or until the filling is set and a toothpick inserted into the center comes out clean.
