Slow Cooker (Crock Pot)

- 4 boneless skinless chicken thighs (or breasts)
- 1 cup pineapple chunks fresh or canned, drained
- 1/4 cup soy sauce or coconut aminos for gluten-free
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1/2 tsp garlic powder
- 1/4 tsp ground ginger
- 1/4 tsp ground pepper
- 1/2 tsp crushed red pepper flakes optional, for heat
- Salt to taste
Prep the Chicken: Place the chicken thighs (or breasts) in the slow cooker. You can optionally sear them first for added flavor, but this step is not necessary.
Make the Sauce: In a small bowl, whisk together the pineapple chunks (with juice), soy sauce, honey, rice vinegar, garlic powder, ginger, pepper, and red pepper flakes (if using). Pour the mixture over the chicken in the crock pot.
Cook: Cover and cook on low for 4-6 hours or high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the crock pot and stir it into the sauce to soak up the flavors.
Serve: Serve the shredded chicken over steamed rice, cauliflower rice, or in wraps. Garnish with sesame seeds or chopped green onions if desired.
